Is there any difference from which country you buy the iPhone from ? Or is it just a matter if it's unlocked or not ? I was thinking of buying an iPhone from the apple store in china but would it be the same if i had bought it in the Apple Store in US ?

No they all have country specific lte bands but there are some 'golden' models that work in more places than others.

As you can see it's the a1586 a1524 uk model with the most bands
 
Another thing to consider is service. I've purchased several phones in the US and I live in Malaysia. I cannot get them serviced here...even though the service centers are real Apple resellers. Many (most?) service issues are now limited to the country of purchase.
