Anyone know of a way to disable the lion screensaver features that let you pause/move through images using space and arrow keys?

Just use a different screensaver that doesn't have those features ? I don't use Apple's screensavers, I download JWZ's Xscreensaver package and use the bluescreen one.

the iTunes album cover screen saver functions in the same way (you can "browse" the covers using arrow keys/ mouse and actually play the album from the screensaver, which is kind of cool). I doubt there's a official way to disable it, as its more of a new feature than anything else and gives you the ability to show pictures without waking up the computer or opening a program.
