I compared videos from my old 15 Pro with one from my new Base 17 and immediately noticed how much worse the sound quality is – not the speakers, but rather the microphone quality, which also records the audio from the video. The sound on the 15 Pro was much fuller. Has anyone else noticed this? Is there a way to fix it with a software update?

iPhone 16 Pro has "studio-quality four mic array" according to the compare page which the standard 16 doesn't. Likely something similar going on with the 15 Pro vs standard 17.

the 15pro doesn’t have studio quality four mic array, this was introduced with the 16pro

Yep, but that doesn't mean the 15 Pro doesn't also have a more advanced microphone system than the standard models.
