When I turn off my iPhone's WIFI, it says "Disconnecting WIFI devices until tomorrow" and it turns back on automatically the day after. I want to disable this auto-connection.

I've searched the internet and it was said that I should turn off auto connect but I couldn't find it in the settings.

I turned off "auto-join" but the problem is my phone doesn't connect from that wifi Icon on top of the phone and I have to go to the settings if I want to connect to the wifi again.
 
To disable WiFi for sure (longer than a day) you have to go to Settings -> WiFi and change switch from turned on to off.

By default from control panel (this reached by scroll down from upper right corner) WiFi is disabled for 1 day. I think it was made in iOS 11 or 12. Weird - I agree :D

To connect on demand but have WiFi module available… the way you told about disabling auto connect should work - unless you go to control panel, press and hold WiFi icon and choose preferred WiFi it should not connect.
