Picked up a late 2011 MBP 2.5GHz i7 and it checked out at the Apple Store but after doing some searching saw the issues people are having with their late 2011 models. Is this happening 100% or hit or miss? Wondering if I should just sell it and try and find another one or does this one have a chance of being OK?

All 15" models can be affected. There doesn't seem to be much of a pattern. The more you use the computer the more you subject the GPU to thermal cycling, the faster it dies.

If you're still in the return window, return it. While it's not certain that it'll break in your time with it, it's basically a time bomb.

No, all of them don't have issues. But there people that do are pretty vocal and it's easy to understand why. I think that if it were high enough Apple would do a recall, but they haven't so it must not be.

That said, I would avoid the model year just in case. My 2011 was affected.
