Based in the UK and can only see vouchers on the website for iTunes, Is it something I would have to go in-store for?
 
I was wondering the same thing, as I've been asked to help with a leaving present.

I rang Regent Street this morning and learned that you can buy a gift card with any amount on it for use exclusively at Apple retail stores [not on-line].
 
Same holds true here in Canada, I believe. I've never seen gift cards for use in the online store. Cards for the iTunes store are easy to find though.
 
Yup, they can be bought in a UK Apple Store, and used in a UK Apple Store. No web here, unfortunately :(
 
I sell itunes gift card at very cheap prices.

I sell $50 gift card for $20 only.
