I have this Anker plug and trying to charge my iPhone 15 but it doesn't seem to charge? Do I need to buy a new USB-C plug?

My other plugs seem to have a more square end but the USB-C cable that Apple provides is thin?

Cable will not affect charge speed, that's determined the charging brick. Any decent quality USB 2.0 cable will handle 30W power delivery.

You are running into the difference between USB A and USB C. The large rectangular ports on your charging brick are USB type A. The small, oval port on your new phone is USB type C. If you have a USB Type A to Type C cable, you can continue to use your existing charging brick with your new phone. A USB Type A to Type C cable will likely be cheaper than buying a whole new charging brick.
 
You will need a USC C charger to use with the Apple usb c cable that comes with the new iPhone.
