iOS 5 has some cool new features, but I would like to know from experienced people out here. What should I do, upgrade or wait ?

I wait. If you have a 4S, you will loose your jailbreak, possibly permanently. If you have a 4, you can still boot tethered, and with semitether installed so the phone can boot in non-JB mode (without mail and safari) in an emergency you have a slightly inconvenient but viable solution. In my opinion, the minor stuff in 5.1 is not worth it. Some of it (iPhoto) can reportedly even be installed on 5.0.1

pretty much everything that IOS 5.1 brings to the table can be manually added via Cydia

I installed 5.1 on mine, I must say it's quite effecient, however all the stuff which you find on 5.1 can be added via Cydia. Also 5.1 struggles to add some apps i.e. Spire. So be careful, overall...I'd say no..as I'm using a tethered jailbreak and I can't really be arsed keep booting it up via redsn0w.
