Was interested in using my desktop Mac outside for instance. Does anyone know if this would be possible?
It’s actually using AirPlay 2 for the Mac Virtual Display, which is WiFi, so I assume as long as you are connected to the same WiFi, you’ll be ok.It's interesting that they have never shown this feature with a desktop Mac. Connection may be bluetooth, so proximity could be the factor.

I've managed to use the Sidecar feature to wirelessly mirror the desktop of a headless Mac Studio to an iPad Pro. It felt fiddly and not resilient to reboots so in the end I switched to VNC instead, but it "worked".Anyone know if it will work with a m1 mac mini that is not connected to a screen (headless) ?
We’ll see soon, but my guess is it only displays the Mac screen and you still need to interact with the Mac using keyboard and pointer. The targets in macOS are likely too small for eye tracking accuracy. No idea about drag and drop initially, but I would think it would come eventually. I agree copy paste should work because it’s basically what Continuity does now.How much will you be able to control your Mac using your eyes and with tapping your fingers together?
Will it be a case of needing to stay with the Mac so you can use its keyboard and trackpad to work with what's on the screen? Will you be able to drag and drop things from Vision OS apps to the Mac screen? I think it's likely you can copy from a Vision OS app and paste in a Mac app, because you can do that from an iPhone.
