Be more specific.
On a desktop? Space isn't much of an issue and a border provides a visual buffer between the display and whatever's behind it. It just doesn't seem like a big deal. I have a 27" iMac and it's huge. Shaving a little off the sides, it would still be huge. Growing the display to the edges, it would still be huge.
On a laptop? Sure. Space is at a premium and if you can push the active display closer to the edges you get more usable pixels in the same physical space. I just got a 2020 MacBook Air and it seems to have a normal amount of edge to the screen. It's not worth fixating on.
On a phone? Space is at a premium but you're also holding the display so it sure comes in handy to have a non-active part of the device you can grab without inadvertantly touching and activating UI elements. Pure edge-to-edge display is frankly a bit of a pain in the ass.
On a tablet? I really prefer to have somewhere to grab onto while I'm holding the thing. I think the bezels on my iPad Mini are pretty great and I like being able to casually pick it up and hold the sides of it in a comfortable way.
I swear, a few years ago every casual tech website reader learned the words "bezel" and "chin" and started fixating on these things to an unhealthy degree. And in many cases, it's just a product styling issue, not a functional issue.
