So GTA San Andreas rolled out and looks awesome, blah blah blah. But it's a game that is considered two console generations old. The previous gen's first GTA game was GTA IV. So do you think the next iPad will have the graphical performance and stuff to be able to support it smoothly?

The iPad coming out in 2014? Hell no.

2014 model, maybe. 2015 model, certainly. :)
iPad Air is very close to PS3 in graphical power, so...
 
Ipad Air can run it right now, if Rockstar put enough of an effort into converting it.

However, to run it smoothy and as close to it's original, I'd at least give it 2 more generations, so by 2016.
