Dock Folder, Sub Folder "Sort by" not possible?

Something which I was hoping would be possible in macOS 26, unless I am missing something...

I have my documents folder on the dock which is sorted by Kind, displayed as Folder, viewed as Grid.

Any selected sub folder seems to ignore the settings and defaults to name.

Was wondering if anyone knows if its possible to "sort" sub folders?
