Using SL, and it's probably happened a couple of times before, but why would they move order without me doing anything whatsoever to them?

Dock Icons moved

If you open an application that did not already have its icon "docked" it will be in the Dock until you Quit the application.

Thanks. Just twice I've noticed that one icon has moved position in line up of dock. It's not a big deal but curiosity and all that.
