I’m going to be updating to Catalina soon from Mojave. I want to install a (Parallels) VM of Mojave or an earlier macOS to still run a couple of 32 bit apps. I assume that Apple is able to tell that it’s a VM installation on one’s own device and not count it as separate ‘authorized’ device. Is that so?
 
Hello. Apple will not see a virtual instance of a MacOS system as a authorized device, if there is no serial number - which there isn't because the device does not exist. However, launching a virtual instance of a MacOs system is possible and will work. However, I'm not entirely sure about how apps such as App Store, FaceTime or any other app using your Apple Id will work.
