Just wondering if Apple ever runs any Winter Sales on the MBP?

I'm thinking that sales may dip after the holiday's, so a sale would help.

The only sales Apple ever does are Black Friday and for educational users, a back to school sale.
 
The best you'll find in terms of discounts are via the Apple.com Refurbished Store.

I expect that in the next month or two you'll see tons of retina MacBook Pros turn up there, especially given how picky Apple customers can be, often returning the same (perfectly fine) computer several times until they get one that's "perfect" in their eyes. That's why most Apple refurbished products are practically brand new.

If I could have waited, I would have, but I needed a new laptop ASAP.

Excellent advice.

I bought a refurb in 2007. It was indistinguishable from new (other than the plain cardboard box it came in). It's been running 24x7 since, with no issues.

I think you can get the educational discount at any time of the year. You just need to be a full time student or teacher.

Yes, but at back to school times, Apple has variously offered free iPods, money off, or lately, an iTunes gift card.
