I apologize if this has been asked before, but I'm wondering, do in person Apple stores carry versions of the Mac Studio with upgrades to ram or HD size? I'd like to buy a base Mac Studio but with a 1TB HD, or possibly 64 gigs of ram, but that increases the delivery time to 2 months from now. Wondering if it's possible to buy upgraded models in store?
 
Not yet, and probably not for some time.

If you view the product as the Mac Studio, Apple stores are already carrying a base and an upgraded version, the Max and the Ultra; except that right now very few of either are in stock.

There's a long, detailed thread on what the stores carry and what's happening with availability: In U.S. Apple Stores, what's likely to be available for pickup on March 18? I wrote a post earlier today in that thread after checking 11 U.S. cities/132 Apple stores. Only one store had a Studio/Max available for pickup.

Best Buy and Costco are only selling the base Max/Ultra. In the last few weeks, B&H has had some Maxes other than the base model. That's also discussed in the thread above.

There's a reason why the Mac Studio Orders and Delivery Status Thread, which is basically a build-to-order thread, currently runs 136 pages.
