I know Apple was big about AltiVec and it showed because many of their apps took advantage of the instruction set. I know they also use SSE but i'm not sure to what extent. Does Leopard and apps like iTunes use SSE4.1 or did stop at SSE3 or something?
 
So far, I think things have stopped at SSSE3. Hopefully Snow Leopard will make use of SSE4.1 etc.
 
One would hope given that their flagship desktop touts SSE4 but no word on whether Leopard/Applications actually use it
