Does Apple TV 4K give the option when using subtitles to turn them on just for rewind/replay? I am thinking of replacing my Roku with Apple TV but I like that Roku has the option of subtitles Always On, Always Off, or On Replay... which I find the On Replay to be very nice. I've read that you can use Siri to ask what someone said, and then it will rewind and show subtitles, but I want to know if there is an actual setting to know if it will work without having to use Siri.

There is no setting for "On Replay." You need to ask Siri "What did she/he/they say?" and as long as the app you are using supports the feature it will jump back about 10 seconds, briefly turn on the subtitles and continue playing. The subtitles will go off after catching up to where you were.
