I had iphone and the family all has ipods and such. my wife is just getting an iphone and was wondering should she just use my itunes account or create a new one. i was just going to set up her phone with my account but verizon said it would be better to set up two seperate accounts so our contacts dont accidently go to different phones.

what does everyone else do?

Keep separate accounts, especially with all the new iCloud stuff.

There is a way to use one, people on here probably know where to find it on Apple Support.
My wife and I have our own, I think its much easier this way. Only benefit I see is you only need to buy an app once. With Home Sharing, you don't need 1 iTunes account to have the same music.

how would you set this up?

You set the master account in iTunes that has all purchases - set the same on all your iDevices so you can share all purchases seamlessly through a single account.

For icloud, setup individual personal accounts under iCloud settings. This will keep you mail, calendar, contacts etc separate.

I use a separate account for iTunes purchases and all iCloud/iMessage stuff. You can essentially share an id for purchases and use separate ones for the rest of the features.

Wouldn't this be an issue playing games/game center?

No. You can have multiple games center accounts.

It's possible to have more than one account and to share purchased content between them.

You just have to copy the purchased item(s) through iTunes.

Updates can be done on the device itself.

True, I just find it easier this way. Plus as my daughter was only 9 when she got her first iOS device she was too young to have her own account.

how do i clear my old iphone and restore it all without downloading ios 6.0.1? is it possible. my wife is taking my old phone and i am somehow going to create the other itunes account.

There's no way to restore without updating atm

Settings/General/Reset/Erase All Content and Settings

Tried this a few weeks ago and it tried to download the update :/

To set up another iTunes account create a new Apple ID and you likely have to attach a credit card or use a giftcard
