That it, if a call comes from 123-456-7890, and I set up a new contact, Joe Blow, is there anyway for DW to see his calls come in as Joe Blow? Or will she have to create her own contact w/his name, number, email, etc.

Everything remains separate.

You still have your own contacts.

You even still have your own calendar. The "Family" calendar is added *in addition to* your own calendars, and is really just for events you wish to share with the fam. Ditto for the "Family" Reminders list.
 
The best thing I could suggest would be to create a new gmail or something, some email account you can share, and you could both enable it on your devices and turn on contacts for that account.

Call it something like "dmaxdmax-family@gmail.com"
