In the Backup & Storage section of iCloud, it lists all my apps and things like Camera Roll to back up to iCloud, but it does not mention SMS. Does anyone know if backing up to iCloud backs up SMS/iMessage and if so, why I can't see it on iCloud.com and why there's not a way to turn backing it up on/off?

Its does backup them up, but you can only get them back by a full restore. They are not accessible from icloud by you.

Backed-up information includes purchased music, TV shows, apps, and books*; photos and video in the Camera Roll; device settings (for example, Phone Favorites, Wallpaper, and Mail, Contacts, Calendar accounts); app data; Home screen and app organization; Messages (iMessage, SMS, and MMS), ringtones, and more. Media files synced from your computer aren’t backed up, but can be restored by syncing with iTunes.

So no matter what apps I select to backup, SMS and iMessages are backed up to iCloud no matter what right?

It does, but not help much. I am looking for a third-party solution, I think there a some tool that does better job.

if you find an app or something that helps to backup SMS *and* move them somewhere else please let me know

I think this is a GREAT biz idea waiting to be explored ... SMS app ! [NOT whats app type app ...but regular SMS app ]

Exactly. This is what I am also looking for.
Pls make an app for this.
Will sell a lot for say 0.99$.
