I read that sometimes the iphones will compress instead of keeping original resolution of photos and videos. How do I know if mine is keeping the original resolution when I connect my iPhone and copy the content from it to my computer with image capture?
 
All images and videos taken with the camera on the iPhone are compressed anyway. Jpegs and .mov. Direct copy to a computer won't compress them again, but sending images or video via iMessage will if they're too big
 
So they get compressed in camera automatically before I ever download them off the phone? are there settings in the phone where I can adjust in phone compression on the phone?

Nope.
But this doesn’t matter. I think what u heard is that the phone keeps a smaller version than normal jpg when using iCloud for photo storage.

Keeping RAW is possible. Just not sure if already on the 6s
