I'm on Verizon, and I'm not interested in signing a contract. I usually just do SIM free, pay the rull price, and either switch SIMS, or call Verizon to let them know that I've gotten a new phone. Just want to make sure that's not an issue this year, or should I choose Verizon and can I pay full price still and have the phone arrive, working out of the box?

If your paying in full through Apple.com just get the SIM free version, put your current SIM and all should be fine. No need to contact Verizon. I have AT&T and that is all I do when I get a new phone I just transfer the SIM and carry on.
 
According to Apple's Cellular Info page, there is only one model variation of each new iPhone in the US. In other words, every phone will work on every carrier regardless of which carrier it's ordered for if purchased at full price. All of the phones on Apple.com are unlocked except for AT&T phones purchased on a payment plan through AT&T. You can buy a SIM free phone or pay full retail on any of the "carrier models" and it will work on Verizon.
