I am currently using my m1 Air with cdmi out of the dongle when hooked to a monitor, The monitor also has a display port, does it even matter?

Technically, DisplayPort is the better standard, and the video signal nativeLy carried over USB C, and theoretically capable of higher resolution. But effectively, it doesn’t matter.

Some older monitors will only support 4K30Hz via HDMI but 4K60Hz through DisplayPort.

Does it matter?

It might...

Depends on variables such as:
- your connection scheme (USB, HDMI, etc.)
- the particular cables you use
- the display you're using
- a combination of factors

The only way to KNOW (whether one or more of these variables matter to YOU)... is to try it and see...

I think this is the adapter I have

It looks fine to me when hooked to my monitor using the recommended settings, it says 75 hz(can select 60 as well) next to the monitor in display settings. I really don't care about that and since it looks fine to me I guess I am good just using cdmi, I just wasn't sure if it would be even better to use dp
