I converted a bunch of home videos to m4v (H264) and some were out of place so I joined them in Quicktime and the output (.mov) is much smaller and appears to be less in quality. Is this supposed to be this way? Is there a better software to use to join video files?

There is a digital video sub-forum here at MacRumors.
You might ask this question there...

Ill chime in here with what we use. Wondershare Video Converter Ultimate. It keeps getting better with every revision and it has faaaaan-tastic encoding capabilities, plus it downloads streamable content, screen records, live casts to digital devices if you have it setup for that and the interface is as equally beautiful as the software is powerful. Its software like this which is the reason im still a mac user. That and theres not a pc which can reliably run macOS out of the box (with very little configuration setup) but as soon as something like a bootcamp scenario is available, im back to pc hardware. Good luck.
