I read my Exchange mails with default mail software from iOS. Does Mail (with Exchange) generate read receipts? If yes howto disable?

You turn it off in Exchange. Using Webmail go to Options -> Messaging -> Message Tracking Options -> Never Send a Response (needs to be selected).
