To date, Messages has no way of letting us choose which SIM line to send a new message from. Likewise, we have no way of seeing which line the message was sent to.

I can select the SIM/number when composing a new message, though it doesn’t appear until after I’ve added a recipient.

Received messages also show an indicator as to which SIM/number they were sent to.

Edit: the same SIM/number indicator shows on outgoing messages.

Ah, I didn’t see you’d posted this in the Tahoe forum and assumed you were referring to iOS. Odd that this functionality isn’t on Messages for Mac, I guess they’ve geared it to iMessage over traditional SMS.

Edit: just checked my iPad out of curiosity and it’s the same as Mac - no option to choose which SIM to send from and it doesn’t have the indicators or any way of seeing which SIM text messages relate to. I had a hunt around Settings and there’s nothing in there either for selecting which SIM to use. I’m curious how the iPad (and Mac) decide which line to use when creating a new SMS. Maybe it’s based on whichever SIM is set as the default voice line on your iPhone?
