So, the old ipod touch iCal didn't sync individual calendars separately -- it just had a single calendar. Does the new calendar sync all the separate calendars on iCal?

Yes calenders are separate now just like they are in iCal or whatever calendar app you use. The only thing I can't figure out is how to make the colors correspond with the colors in iCal, if it's possible some way.
The colors in iCal do not correspond to the colors on the ipod touch 2.0 calendar. This may just be a bug that will be fixed in a future update (i hope).
If however you are using mobile me to sync your calendars, then the calendar colors will match the colors you are using in ical.
