I know this use to be possible. I've seen videos where people show themselves going into Audio settings, Clicking "Input" and checking "Use this port as Line in"

On my Macbook Pro Early 2013 I cannot find a way to get my headphone jack used as a line in. Did they remove this feature? If so, why?

Actually, mic in is not completely lost.
It still works with iPhone earplugs with remote&mic.
However, it is mono.
And it requires a 3.5mm plug with 4 rings to work.
PS as a bonus : the remote works as well (play/stop, volume)!

So if I used a 3.5 mm auxiliary cable with 4 rings, it'll be recognized? Or is what you're saying, only the iPhone earplugs work.

moreso sets of headphones/earbuds with a line-in mic
Actually, I never measured is it a line- or mic-level input.
From the schematics I can tell, however, that the chip used is the same found in iPhones. So the connector is actually equivalent to the one found on iPhones. Plus the added optical digital out behind it.
I imagine iPhone mic input is not line level.
For the OP: here's a special adapter for the task.
