Does the iPhone have more lag with the more apps you have installed?

My phone, along with many others is extremely laggy and slow at times. Many times menus will just freeze for a few minutes and I'll have to restart it. The app store freezes quite a bit. Can the iPhone handle a lot of apps installed at once? Any help would be appreciated.

It seems to me that the OS isnt FULLY releasing the memory after you quit an app. So after you launch a bunch of different apps the phone slows down. A reboot always fixes this...
