Is the entire logic board now based on nvidia parts or is the 9400M simply a replacement for the x3100 while the rest of the board will still be Intel based? I know Centrino requires a combination of Intel parts on the logic board so does this use of a nVidia based part make Centrino 2 something that can't be done now?

Centrino is nothing but a marketing term bundling together several intel parts, mainly chipset and cpu. So no, new MacBooks are not centrino since they use nvidia chipset but no functionality is lost.
