I’ve been seeing so much conflicting information online. Some fills are saying turning off auto brightness and manually adjusting it within control center helps save battery health life for the long term. However I’ve also heard conflicting information saying keeping it on is better.

What’s your take on this?

I imagine it's completely dependent on where you set it. If you manually max your brightness out then auto brightness would save battery but if you keep it low it won't.

I have auto brightness on but also keep the brightness fairly low. It only goes high when outdoors due to sunlight.

Actually, I did just remember one thing. On newer iPhones the screen is able to get as dark as 1 nit in a low light environment, but only if auto brightness is turned on if I recall. So in some situations it actually will save battery compared to setting it manually.
