I'd be amazed if it didn't void the warranty.

I upgraded the RAM in mine but kept the original sticks to put back in should it need to be looked at by Apple. I put it back to original when I traded it in and there was no comeback stating warranty seals were broken or anything like that.

I would have expected an issue had I taken it in for repair with non OEM RAM inside. That said, had I had a problem, I would have have put it back to original as a matter of fault finding before it got to the taking it in stage.
 
This was discussed a lot a few years ago. I don't recall any threads where people said their warranty was voided, however if you have a problem and Apple thinks it was caused by your opening the machine, I'm sure they could use that as an excuse - and it's also possible that you actually could do some damage.

I decided to get a Mini that was already configured with Apple memory myself because I planned to keep the computer for a long time and didn't want to chance it. The way I look at it, every time you open up one of these computers there's a risk of damage. Yes, you could remove your memory and put the original back if it needs service, but then you would end up opening the mini three times (initial installation, removal of extra memory and replacement after service).

Guess it all comes down to whether you're a gambler. I am not. ;)
 
Here are the relevant parts of the warranty. Seems pretty clear that they *could* refuse warranty service if they wanted to.

"This Warranty does not apply:

(c) to damage caused by use with a third party component or product that does not meet the Apple Product’s specifications

(f) to damage caused by service (including upgrades and expansions) performed by anyone who is not a representative of Apple or an Apple Authorized Service Provider "

I can get a new 2018 Mini with an i3 processor for a good price but it only has 8 GB of ram. I'd like to upgrade the ram.

Here is what it says on Apple's website. However I know that it can be done and the memory is not integrated.

Mac mini (2018) does not have user-installable RAM. You can configure the memory in your Mac mini (2018) when you purchase it. To upgrade the memory in your Mac mini (2018), go to an Apple Store or Apple Authorized Service Provider.

No it doesn't void the warranty unless you break something and that needs to be proven. I upgraded my 2018 Mini the day I received it from Amazon. I followed the iFixit video, took my time and everything worked.

It doesn't "void the warranty" - but Apple could refuse warranty service due to damage done installing the RAM.

Basically, YMMV. Roll the dice, take your chances.
