You don't need to wait until the phone is fully charged to unplug it.

You also don't need to unplug just because it is fully charged. The phone won't be somehow damaged if you leave it plugged in, even though it is already fully charged.
 
I use an app called battery doctor that makes a noise when it's done.
I know it doesn't do anything for the battery I just like that it alerts you when the battery is charged.
 
Is there anything on a iPhone 5 to make a sound when it is done charging at 100% so I know to unplug it. Or a App to make it do that. Thank You. :)

I haven't heard about that for iPhone 5.. Just to check it out to make it sure..:)
