There are too many big items that people are interested in this holiday season.

It is only every 6-7 years that a new console comes out and in the next few weeks, the ps4 and xbox one are coming out.

People who usually don't mind spending $500+ for a tablet each year might be holding off to spend that on one of the new consoles.

Also, there aren't going to be any Apps that take advantage of the faster processor in the iPad Air any time soon.

Of course they will sell out. Every big Apple, Sony, Microsoft, and Samsung product sells out on launch if you trust their PR department. :p

The only way Microsoft products sell out is due to artificial constraints in supply.

Nope, I bought my iPad Air today and have the Xbox One coming on the 22nd. (picking up the PS4 later).

Tried to buy a 128 GB WiFi White Air this morning at 9:45 at an Apple store and an electronics chain. Both sold out already, but they had other models available.
