My text message tone is the default 'Note' tone, and it only ding's once when one message is received. I heard an iPhone the other day have a double-ding when one message came in.

The notification was back to back instantly, as if it had been designed to ding two times for the one message. It was not delayed as you can get repeat notifications every 2 minutes.

Does anybody know how I can get/create the double 'Note' notification?

Realistically, someone probably got two texts at almost the same time, hence the double note sound. Either way, I made a double note ringtone you can sync on your phone via iTunes.

It's pretty easy. Just drag the file to your iTunes, and connect up your phone. Click on your phone at the top left, click tones in the list, and check sync tones.
Then, on your phone, you should be able to set it as the tone via settings > sounds > text tone and scroll down to ringtones. Let me know if you still need help :)
