Is this possible? More of a query than me actually doing it but would you just back up the system (using time machine?) Boot to 10.6 install dvd (or .img on a usb using alt key) then just install as easy as that or would you need to erase the HD first?

Fair enough! Question answered, what about doing it from any machine, non retina on 10.8.2, how would the downgrade process go?
I have feb 2011 MBP, running 10.8.2. It came with snow leopard installed.
I can downgrade that one, holding command + r on boot up.

Not doable, your computer did not exist when 10.6 was around so there are no drivers for it in the OS, even if you did manage to install it, it would run like crap.
A rule of thumb is that you cannot install a version of OS X that is older than the one that came with your Mac.
The latest MacBook Pros that will run SL without a hiccup are the early 2011's, some people have successfully installed SL on late 2011 machines, but YMMV.
On the mac mini forum, someone claimed snow leopard will run in a Parallels VM. Haven't tried it myself.
