I'm about to get a new iPod so I wanted to try downgrading back to iOS 1 for fun. is this possible? i was going to try to put in into DFU mode, run the firmware on it, and then just run recboot. could it work?

Not with a new iPod.
 
New devices only work on the current and further iOS softwares.

1G iPod can have - 1.1 and higher
2G iPod can have - 2.1.1 and higher
3G iPod can have - 3.1.1 and higher
4G iPod can have - 4.1 and higher

So if you buy a 1G iPod Touch you might try, even though it will be hard since Apple no longer "seeds" that built so you'll have to find a program like TinyUmbrella to help you with it.
