I noticed that some updates ask for a power source to be plugged in? If the battery is charged up why is this necessary and can the upadate be done without plugging in.
 
Yes, most of the time the update can be done without a power source.

It's only precaution. If there's a system-critical update that is rewriting the operating system, and your battery dies....then your hard drive is screwed.

Most updates should be fine, I ignore it if it's something stupid like an iTunes update.
