Their is an app in the Cydia store called MxTube that allows you to do exactly what your asking. That app was available in the Apple App Store very briefly (just a few hours) a few months back, and for some reason Apple decided to remove the app from the store, and it hasn't returned since.
There are extensions for both Firefox and Chrome that allow you to download Youtube vids. I downloaded the Chrome extension this weekend, it downloads vids as mp4. You can just drag and drop the file to iTunes and sync from there.
I think it violated YouTube's Terms of Service or something like that, but yes as soon as I heard about it I went and snatched it up. I was too late for HandyLight.
