Dual bay Enclosure and cloning

Correct me if i'm wrong. i'm running out of the 160 GBs on my external hard drive and was wanting a dual bay enclosure with two new 500GB hard drive at the size of 3.5. i need to transfer all my data.
would i just boot off my external and clone it too the new hard drives
and does the two hard drives in the enclosure work as one whole hard drive (giving me a total of 1TB) or do they work as two separate hard drives.

i've looked on new egg for dual bay enclosures. does anyone have any suggestions on an enclosure.
