What is the diff between them? the number of cores? so the Mini i5 or i7 speeds can't compare to the iMacs?

the difference is that the dual core has 2 cores, but 4 virtual. the quad core has 4 cores, 8 virtual. the i7 usually has a higher turboboost that the i5. The base mac mini has the same internals as the 2011 13"macbook pro base model meaning it'll have a geekbench score of about 6,000. which is great but compared to the quad core i5 in the imacs and the quad core i7's in the mac mini server and 15"/17" macbook pros which easily score 9000+ in geekbench.

Easy, quad core i5 only comes in desktop version and has no hyperthreading. All other i5s have hyperthreading.

The only quad core mobile chips are i7s.
