My current setup is mac HD on a 256gb SSD and a 2nd internal 2tb drive for data. What's the best way to re-create this with the current options? Get the 256/512 internal SSD for mac HD and then add an external SSD for data? Or spinning thunderbolt drive?

You'll save money by getting the 256GB internal SSD and keeping your data externally. A 2TB external SSD will be faster than a 2TB spinning disk, but pricier. If I were you and didn't mind the expense, I would get a 2TB Samsung X5 portable SSD (Thunderbolt 3) for $1000.
 
Thanks chabig. Is there a lot of benefit for normal use (docs/photos/videos) in getting the X5 vs something like the T5 with USB-C, USB 3.1?
 
I have two T5s. They're very fast. Though the X5 is the fastest you can get, I don't think it's worth paying the price for. The 2TB T5 is $400 at Amazon.
