What I want:
Dual Monitors + Docking Station w/ MacBookPro Unibody

Budget: $1000.00

Is this possible? If so, what do you recommend
 
There aren't any docking solutions for Macs.

As for dual monitor, you can use the internal monitor on the MBP and an external monitor at the same time. It's not possible to use two external monitors at the same time.
 
The closest You are probably going to get to a docking station would be to get the 24" Apple Cinema Display.

Pair that with the MBP own Display to get the second Dispaly and you should be set.
 
For dual monitors, look into the Matrox DualHead2Go. I haven't used it personally, but they claim Mac compatibility, and they offer a DisplayPort version. Combine that with the docking station of your choice and you should be set.
 
sadly i dont think their are any mac specific docking solutions, and also i dont think you can have 2 external monitors, only 1... but then again im sure their will be an adapter somewhere that will allow you

you could a Matrox DualHead2Go to get 2 displays.
There is also a TripleHead2Go, but ...

Get a BlueTooth keyboard & mouse.
Thats pretty close to being a docking station.
