I currently have one monitor running at 2560 x 1440. I have another monitor that can support this resolution. What adapter do I need to run these two at the same resolution?

What notebook do you have. Retina just the same you use for the first in second port.
Something else? It is going to be difficult. Displayport can handle the res of both on 30hz but I don't know how you can split the signal with DP 1.1a or if you use as I assume DVI/HDMI at the end.
 
Which MBP do you have?

I have RMBP which has two thunderbolt ports (mini displayport) and use a apple mini display to dual link DVI to one and a monoprice mini displayport to displayport to my second. Works well. Using the HDMI, you can use 3 external displays.
