Hi,

I have en iMac (with OSX 10.11), with an extra monitor attached.

When I use the mouse on an app on the extern monitor and open a new app, it opens on the extern monitor.
Is there a way to force the app to open on the iMac's main screen? :)

If you are starting the app from the dock, you can right click the icon on the dock, and choose options->assign to-> ...

There may be a way to do this for apps not on the dock, but I don't know how.

I don't seem to have that option? :/

Hmmm I'm running 10.10. Maybe they nixed the feature in El Capitan. Seems Apple's strategy lately is to remove every useful feature they can find and replace them with fluffy crap. Anyway, this is what it looks like on mine:
