I have backed up my games to a harddrive, creating fixed size disc images for each disc. I did this so I wouldn't have to worry about a scratched or lost disc…

But now I went to install from one of these disc images , with no luck. Do I have to burn all these disc images back to disk before installing? Or is there a virtual DvD disc emulator software for the mac?

Roxio's Toast should be able to mount as a CD/DVD.
 
Programs should install just as well from a DVD as from an image, unless the software perform specific checks that would be unique to the original media (games do this more commonly than other software).

Just like with RAID controllers and backups, you should test them before you need them.
