I'm in the process of making a dvd. I would like to be able to have an extra's page with a list of audio tracks you could choose and listen to. Without video. I can't figure out how to do this in iDvd. If it's possible let me know. If not I'm open to trying other apps.

I don't know that you can with iDVD, without leaving the menu.
It's certainly possible with DVD Studio Pro, if you have that available.
