What do you think about using DVD/CDs for cold, long-term storage of backed up work documents documents? I am currently using cloud storage and recently setup a NAS in the office. Just wondering if having another physical back up would make sense and if this is a good medium to use.

Any pros? Cons?
 
Yes, go with M-Discs or at minimum BD-R HTL discs. Standard burned CDs and DVDs don't have a very long shelf life; some will not even last a decade!

(Professionally-pressed CDs and DVDs last much longer, it's the ones you "burn" in a consumer drive that are a problem!)

But if you use the right disc, I agree it's a great choice for long-term archival, if somewhat pricey. The only better option is tape, and no one can afford that.
