E-mail not loading

Hi everyone. Managing my inbox is my OCD. Ever since watch OS11, my email on my watch will show one or two emails in my inbox, usually the most recent. This doesn't reflect the 20-30 I have in my inbox on my phone. I have deleted the account on my phone and watch multiple times. It tends to reload everything, then after a day or two, it is back to the same behavior. I've tried everything I can think of. Any ideas?
